Irvine’s Taco Rosa may bear a common restaurant’s name, but contrary to the basic name, their cuisine truly stands out as top of the charts. Located in the Irvine Marketplace on the border with Tustin, Taco Rosa serves authentic Mexican cuisine with a Yucatán/Mayan twist. While the menu may contain Mexican classics such as burritos and quesadillas, the flavors derive from the chef’s Yucatán/Mayan background. Such flavors exist all across their menu, especially in their Carnitas Pibil. In this entrée, Taco Rosa plates tender pork shoulder with pibil sauce, pork belly beans, guacamole, escabeche, Mexican rice, and a sweet corn tamalito. Each item comes plated individually, allowing you to savor each item on its own or combine them how you would like. One of the themes of my blog follows the premise of “You can’t judge a book by its cover.” Colloquially known as hole-in-the-wall businesses, the external appearance of some buildings may mask the true nature of the business inside. If you drive through a neighborhood that looks worn down on the outside, that does not necessarily tell the story of what goes on inside. If you drive through Highland Park, you may accidentally miss Fusion Burgers if you have no intention of looking for it. Though they appear simple from the outside, this restaurant truly serves some outstanding cuisine inside that rivals many of the more expensive restaurants around Los Angeles County. One of their customer favorites, the Mexican BBQ Burger, uses a burger patty made of al pastor meat, and comes with aillade (a variation of aioli), a grilled pineapple, caramelized onions, and Boston lettuce. There exists a concept called synergy. This concept states that the interaction of elements, when combined, produce a total effect greater than the sum of the individual elements and contributions. Basically, certain mixes and combinations together make for a greater product than the items separately. For example, bleu cheese and bacon burgers have existed for a while because the contrasting flavors of the bleu cheese and bacon make their flavor come out even more. People all over the world have a strange fascination with fast food. Some might say that people enjoy the ‘fast’ aspect of it, as they can pop in, receive food, and leave faster than food should normally take to cook. Everyone recognizes both Chinese fast food and Mexican fast food, but have you ever thought about what would happen if someone combined the two? Well, this combination finally happened at Dragon Loco, a Chinese & Mexican fusion fast food restaurant. Tucked away at the back of a strip mall, this small restaurant takes everything you know about Chinese fast food and stuffs it into forms more common at Mexican fast food places. They allow the customer to select the choice of meat, then how they want the food prepared. Meats include Kung Pao chicken, BBQ pork, teriyaki chicken (regular or spicy), tofu, carne asada, orange chicken (regular or spicy), and shrimp. From here, you can order any of those meats in food such as tacos, burritos, quesadillas, and more. Of particular note, the Burrito Loco takes an entire meal and stuffs it into a burrito – fried rice AND chow mein fill up this tortilla along with the meat. Props to them for using the unique name Juantons, and for making them with cream cheese and chorizo.

Although fast food exists all around the world, the United States has made it the most prevalent. Will Americans ever get over the fast food hype? Of course healthier options exist out there, but sometimes we value certain things like money, time, and convenience that coax us into going for fast food. If you have a hankering for fast food, at least make it count and support your local mom & pop shops, such as the folks at Dragon Loco out in Ontario.
